For Super Bowl LIX is the Kansas City Chiefs vs the Philadelphia Eagles at 5:30 p.m. Sunday, and the Chiefs are aiming for an unprecedented third win in a row. According to the media, 100.7 million Americans will host parties for the big game, costing billions of dollars. Get ready for the big game Sunday with snacks, appetizers and finger foods with big taste. One criteria for game food is it must be able to be eaten with your fingers — no knives and forks allowed! Here are some ideas to feed those hungry football fans no matter who they are cheering for:Sheet-Pan NachosWho doesn't love a sheet pan recipe? Put it together, pop it in the oven, remove and enjoy! So perfect for game day. Don't be scared off by the long list of ingredients, this recipe goes together quickly.Serves 6-8Nachos:1 tablespoon olive oil1 medium onion, chopped (about 1 cup)1 pound 80/20 ground beef 1 teaspoon chili powder1 teaspoon coriander1/2 teaspoon dried oregano teaspoon kosher salt 16-ounce bag thick and sturdy tortilla chips1 bell pepper, chopped (about 1 cup)15-ounce can black beans, rinsed and drained1/4 cup sliced black olives1-1 1/2 cups grated cheddar or Mexican blend cheese, shredded Cilantro-lime crème:1 cup sour creamJuice of 1 lime1/3 cup cilantroPinch saltGarnishes:1 avocado, cubed2 scallions, green ends sliced thinly1 plum tomato, diced1/2 cup cilantro, chopped1 jalapeño pepper, seeded and thinly sliced1/3 cup sour creamPreheat the oven to 400 degrees.Heat the olive oil in a medium nonstick or cast iron skillet, and cook the onions for 5 minutes until they start to soften.Add the ground beef, chili powder, coriander, oregano and kosher salt. Break the beef up with a wooden spoon and cook until it browns, about 8-10 minutes. Remove from the heat and set aside.Line a sheet pan with parchment paper. Add the tortilla chips, enough to cover the sheet pan. Drain off any fat from the ground beef mixture. Using a slotted spoon sprinkle the ground beef mixture evenly over the tortilla chips. Sprinkle the Add the bell pepper, black beans, black olives and cheese over the ground beef. Bake the for 5-7 minutes, or until the cheese melts and becomes bubbly.While the nachos are baking, combine the sour cream, lime, cilantro, and salt in a food processor fitted with the blade. Pulse until the the mixture is smooth and no lumps remain. Taste and adjust seasonings if needed. Remove the sheet pan from the oven and sprinkle with the cubed avocado, scallions, tomato and chopped cilantro. Drizzle with the cilantro-lime crème and serve.Jalapeño PoppersLike it hot? This one's for you, and the recipe is easily doubled or tripled for a crowd.Serves 22 large jalapeño peppers8 ounces cream cheese softened1 1/2 cups shredded cheddar cheese½ pound bacon, cooked and crumbled or roughly chopped1/4 cup sliced green onion1/2 teaspoon garlic powder1/2 teaspoon kosher salt1/4 teaspoon black pepperPreheat the oven to 400 degrees. Line a baking sheet with parchment paper.Slice each jalapeño pepper in half lengthwise and use a small paring knife or spoon to scrape out the seeds and veins. You may want to wear kitchen gloves to project your fingers front the peppers' capsaicin. And a word of warning: Don't scratch your eyes for any reason! In a mixing bowl, combine the cream cheese, cheddar cheese, bacon crumbles, green onion and spices. Use a spatula to fold everything together.Spoon the cream cheese mixture into the jalapeño halves and arrange the stuffed peppers on the prepared baking sheet.Bake 20 minutes, or until the peppers are tender and the cheese is melted and starting to brown. Serve as soon as they’re cool enough to eat. You also can make ahead of time and serve at room temperature. Pizza CupcakesUsing refrigerated pizza dough makes this recipe a breeze to make, and these pizza cupcakes are so tasty! If you like a flakier cupcake, try using refrigerated crescent roll dough instead of pizza dough.Serves 48-ounce can refrigerated pizza dough1/2 cup pizza sauce1 cup shredded mozzarella cheese1/2 teaspoon garlic powderTopping choices: Pepperoni, sausage, peppers, onions, mushrooms, spinach, bell peppers, red onion, olives, ham and pineapplePreheat oven to 375 degrees. Spray eight, regular-sized muffin or cupcake cups with nonstick cooking spray. Cut pizza dough into eight squares and press each into a muffin cup, forming a small crust. Make sure to press the dough up the sides of the cups to create a well for the toppings.Sprinkle 1 tablespoon of cheese at the bottom of each muffin cup. This creates a gooey, cheesy base that holds everything together.Top with 1 tablespoon of pizza sauce, spreading evenly over the cheese to ensure each cupcake has a rich, pizza flavor.Add the remaining cheese and your choice of pizza toppings. This is where you can mix and match to your heart's content, or have each person make their own pizza cupcake.Sprinkle garlic powder over the toppings for an extra burst of flavor.Bake 15-18 minutes or until the edges are golden brown and the cheese is bubbly.
